Toriciya is THE place to go for premium SAKE & SHOCHU in Sydney.
JIZAKE - Premium SAKE is not brewed by big sake breweries but rather by small local sake breweries. There are 3 types of JIZAKE;
Junmai-shu (made only out of rice, rice kouji & water)
Junmai-ginjoshu (Junmai-shu - fermented in low temperature for a longer period)
Honjozo-shu (brewing alcohol is mixed in addition to the above raw materials)
Unlike other sake bars, we only have Junmai-shu & Junmai-ginjoshu. We strongly believe SAKE should be Junmai and tastes better warm.
SHOCHU is a spirit made from sweet potato, rice, barley, sugar cane, soba etc. and can be enjoyed straight, with ice or with cold or hot water.
We have Imo (sweet potato), Mugi (barley), Kome (rice) and Kokuto (sugar cane).
Again we only have what we believe is the best.
At Toriciya, we are very particular about choosing dishes which will enhance the flavour of SAKE & SHOCHU.
Toriciya was established in 1991 as the first authentic Yakitori bar in Sydney and soon became very popular. Yakitori consists of various parts of chicken grilled on bamboo skewers. It is flavoured during cooking either with Tare (soy-based sauce) or with salt alone. Yakitori is one of the most popular Japanese foods and suits the flavours of SAKE & SHOCHU.
At Toriciya, a wide variety of other dishes are also offered including Tuna sashimi - Bluefin or Bigeye in winter, potato salad, grilled eggplant, Nikomi-Japanese style beef stew, Wonton, as well as a variety of rice dishes.
